Recipe Introduction
"A classic Vietnamese condiment, this sauce is made from fish sauce, sugar, lime juice, and vinegar. It is a partner to myriad Vietnamese dishes, and is a tasty alternative to peanut sauce."
List of Ingredients
â—¦ 3 cloves garlic, chopped
â—¦ 1½ tablespoons sugar
â—¦ 3 tablespoons fish sauce
â—¦ 2 tablespoons rice vinegar
â—¦ 2 tablespoons fresh lime juice
â—¦ 1 serrano chile, seeded and thinly sliced on the diagonal
â—¦ 1 tablespoon each: grated carrot and daikon
Recipe
Using a mortar and pestle, grind together the garlic and sugar until a paste forms. (Alternatively, combine the ingredients in a mini food processor and process to a paste.)
Transfer the garlic paste to a bowl and whisk in the fish sauce, rice vinegar, lime juice, and ¼ cup water. Pour through a fine-mesh sieve into a clean bowl and add the chile, carrot, and daikon.

• Daikon: Long, cylindrical, white-skinned daikon is a radish of Asian origin. Peppery in flavor, it is thought to aid in the digestion of oily foods. It often appears raw, thinly sliced or grated, in many types of Asian preparations.
