"Originally praised for its medicinal purposes and around since 1500 BC, horseradish is often considered the world's first condiment. Today, people swear it helps with everything from headaches to respiratory issues. Me? I just think it tastes delicious. My favorite ways to use it are in cocktail sauce and Bloody Marys, but you could also mix it with mayo for a sandwich spread, spread it on pork or beef, or mix it with sour cream for a dip. I have friends who add it to applesauce and risotto. Making horseradish is easy, which is good because once you try homemade, you'll never want to get the store-bought stuff again."

â—¦ 5 ounces horseradish root, peeled and chopped coarse (1 cup)
â—¦ ¼ teaspoon kosher salt
â—¦ ½ cup cider vinegar
Recipe
Pulse horseradish and salt in food processor until coarsely chopped, scraping down bowl as needed, about 15 pulses.
With processor running, slowly add vinegar until incorporated and mixture has pulplike consistency, about 1 minute. Transfer to jar with tight-fitting lid and refrigerate. Horseradish can be refrigerated for up to 3 weeks.
