Chewy Ginger Molasses Cookies

List of Ingredients
◦ cup unsalted butter, softened
◦ 1 cup sugar
◦ 1 cup brown sugar
◦ 2 eggs, room temperature
◦ 2 teaspoons vanilla extract
◦ ⅓ cup unsulfured molasses
◦ 3 cups flour
◦ teaspoon salt
◦ 2 teaspoons baking soda
◦ 4 teaspoons Gingerbread Spice (recipe follows) or 1 teaspoons ground ginger, 1 teaspoons cinnamon, teaspoon ground cloves, and teaspoon allspice
◦ cup coarse sugar, for coating
Recipe
Preheat oven to 350 F.
In a medium mixing bowl, beat butter, sugar, and brown sugar until light and fluffy, about 3 minutes. Add eggs, vanilla, and molasses. Beat until combined. In a small bowl combine flour, salt, baking soda, and gingerbread spice. Add to the butter mixture and beat until combined.
Scoop dough with a cookie scoop and roll into a ball. Coat dough ball in coarse sugar and place on a cookie sheet. Leave 1 inches of space between dough balls. Bake 11 to 14 minutes. Allow cookies to cool on the pan for about 5 minutes before transferring them to a cooling rack. Store in an airtight container for up to a week.

◦ 3 tablespoons ground ginger
◦ 3 tablespoons cinnamon
◦ 1 tablespoon allspice
◦ 1 tablespoon ground cloves
Combine spices in a small bowl with a whisk. Store in a mini canister or spice jar.
