    Source of Recipe

From "Christmas Baking" by Joyce and Laura Klynstra

    Recipe Introduction

"These chewy cookies with the quintessential Christmas flavor of gingerbread spice are delightful with milk or coffee. Stack them in a large Mason jar, tie on a bow, and they will make a cute Christmas gift."

    List of Ingredients

    ◦ cup unsalted butter, softened
    ◦ 1 cup sugar
    ◦ 1 cup brown sugar
    ◦ 2 eggs, room temperature
    ◦ 2 teaspoons vanilla extract
    ◦ ⅓ cup unsulfured molasses
    ◦ 3 cups flour
    ◦ teaspoon salt
    ◦ 2 teaspoons baking soda
    ◦ 4 teaspoons Gingerbread Spice (recipe follows) or 1 teaspoons ground ginger, 1 teaspoons cinnamon, teaspoon ground cloves, and teaspoon allspice
    ◦ cup coarse sugar, for coating

    Recipe

    Preheat oven to 350 F.

In a medium mixing bowl, beat butter, sugar, and brown sugar until light and fluffy, about 3 minutes. Add eggs, vanilla, and molasses. Beat until combined. In a small bowl combine flour, salt, baking soda, and gingerbread spice. Add to the butter mixture and beat until combined.

Scoop dough with a cookie scoop and roll into a ball. Coat dough ball in coarse sugar and place on a cookie sheet. Leave 1 inches of space between dough balls. Bake 11 to 14 minutes. Allow cookies to cool on the pan for about 5 minutes before transferring them to a cooling rack. Store in an airtight container for up to a week.
