Chocolate Shortbread Cookies

- 1 lb. butter (salted)
- 1-1/4 cups sugar (divided use)
- 3-1/2 cups flour (divided use)
- 1 cup unsweetened cocoa
- .
- White chocolate (or other chocolate of your choice), melted
Instructions
- In medium bowl, beat together butter and 1 cup of the sugar with electric mixer on medium speed about 1 minute. Add 3 cups of the flour and cocoa and mix at low speed until dough comes together, about 3 minutes.
- Blend together 1/2 cup flour and 1/4 cup sugar and mix well. Spread flour-and-sugar mixture on countertop and roll dough out on top of it to about 1/4-inch thickness.
- With lightly floured heart-shaped cookie cutter, cut out cookies. Place cookies 1 inch apart on parchment-lined cookie sheets. Refrigerate one hour.
- Preheat oven to 300 degrees (F).
- Bake cookies 45 minutes, or until firm. Let cookies cool on pans.
When cookies are completely cool, dip half in white chocolate or chocolate of your choice.
