- 1-3/4 cups all-purpose flour
- 1/4 cup cornstarch
- 1/4 tsp salt
- 3 Tbsp granulated sugar
- 1 cup unsalted butter, at room temperature
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 2 tsp finely grated lime zest

- 1/2 cup powdered sugar
- 1 tsp finely grated lime zest
- 1 Tbsp plus 1 tsp Key lime or regular lime juice
Instructions
- To prepare the cookies: Heat oven to 350 degrees (F). Sift together the flour, cornstarch and salt. Put granulated sugar into a small bowl. Beat butter and powdered sugar in the large bowl of an electric mixer on medium speed until light and fluffy. Add vanilla. Then add flour mixture gradually, beating just to blend. Beat in lime zest.
- Shape dough into 1-inch balls. Place about 2 inches apart on ungreased baking sheets. Press bottom of a glass into dough to grease, then dip in granulated sugar. Press on shaped dough until about 1/4-inch thick. Bake one sheet at a time on center oven rack 9 to 11 minutes, or until edges are light golden brown. Remove from oven and let cookies set on sheets about 2 minutes before transferring to wire racks. Cool completely.
- Prepare the Key lime glaze: In a small bowl, combine the powdered sugar, lime zest and juice by whisking gently until blended. Using a clean dry pastry brush, brush the glaze over the cookies. Let set about 15 minutes, then repeat.
Store in an airtight tin.
Makes 3 dozen cookies.
