Lemon Slice-n-Bakes

- 2 cups all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 large lemons
- 3/4 cup butter or margarine (1-1/2 sticks), softened
- 1/2 cup confectioners' sugar
- 1/2 cup plus 2 Tbsp granulated sugar
- 1/2 tsp vanilla extract
Instructions
- On waxed paper, combine flour, baking soda and salt. From lemons, grate 1 tablespoon peel and squeeze 2 tablespoons juice.
- In large bowl, with mixer at medium speed, beat butter, confectioners' sugar, and 1/2 cup granulated sugar until creamy. Add vanilla and lemon peel and juice, and beat until blended. At low speed, beat in flour mixture just until combined.
- Divide dough in half. Shape each half into a 6-inch-long log. Wrap each log in plastic wrap and refrigerate overnight. (If using margarine, freeze logs overnight.)
- Preheat oven to 350° F. Remove one log from refrigerator at a time; cut into 3/16-inch-thick slices. Place slices, 1 ½ inches apart, on ungreased large cookie sheet. Sprinkle lightly with some of the remaining granulated sugar.
- Bake cookies 13 to 14 minutes or until edges are golden brown. Cool cookies on cookie sheet on wire rack 2 minutes. Transfer cookies to wire rack to cool completely. Repeat with remaining dough and sugar.
Makes about 6 dozen cookies.
