    Mrs. Harry Potter's Pecan Puffs

    List of Ingredients


    • 1/2 cup salted butter, softened
    • 2-1/2 Tbsp granulated sugar
    • 1 tsp vanilla extract
    • 1 cup pecans
    • 1 cup sifted cake flour
    • Powdered sugar for rolling


    Instructions


    1. Cream butter until soft; add sugar and blend until creamy. Add vanilla.

    2. Grind pecans in nut grinder (or pulse in food processor) and stir into cake flour. Combine flour mixture with butter mixture. Chill for 30 minutes in refrigerator.

    3. Roll dough into small balls. Place on greased baking sheet and bake at 250 degrees (F) for 40 minutes. While still hot, roll in powdered sugar. Cool on racks. Roll again in the sugar.

      Makes 18 puffs.
