Orange Macadamia Nut Cookies

- 4 cups all-purpose flour
- 2 cups sifted powdered sugar
- 1 cup cornstarch
- 2 cups butter
- 1 cup chopped macadamia nuts
- 2 egg yolks
- 1 Tbsp finely shredded orange peel
- 4 to 6 Tbsp orange juice
- Granulated sugar
- Finely shredded orange peel (opt.)

- 2 cups sifted powdered sugar
- 3 Tbsp softened butter
- 1 tsp finely shredded orange peel
- 2 to 3 Tbsp orange juice
Instructions
- In a large mixing bowl, stir together the flour, powdered sugar, and cornstarch. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in macadamia nuts.
- Combine egg yolks, 1 tablespoon orange peel, and 4 tablespoons of the orange juice; add to flour mixture, stirring until moistened. If necessary, add remaining orange juice to moisten.
- On a lightly floured surface, knead dough until it forms a ball. Shape dough into 1-1/4-inch balls. Arrange balls on an ungreased baking sheet; flatten by pressing with the bottom of a glass to 1/4-inch thickness, dipping glass into granulated sugar for each round.
- Bake in a 350-degree oven for 12 to 15 minutes or until edges begin to brown. Remove from baking sheet to cool on a wire rack.
- Meanwhile, make Orange Frosting: In a bowl, stir together the powdered sugar, butter, orange peel, and enough orange juice to make the icing of spreading consistency.
- Frost cookies with the orange frosting; if desired, garnish with a few sprinkles of finely shredded orange peel on each cookie.
Makes 6 dozen.
