Peanut Butter Cookies II

- 2-1/2 cups sifted all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (1 stick) butter
- 1/2 cup vegetable shortening
- 1 cup granulated sugar
- 1 cup firmly packed light brown sugar
- 2 eggs
- 1 cup creamy or crunchy peanut butter
Instructions
- Sift flour with baking powder and salt onto wax paper; set aside.
- Cream butter and shortening until light in an electric mixer bowl at moderate speed; add granulated sugar and brown sugar, and cream until fluffy. Beat eggs in one at a time. Add peanut butter and beat at low speed just until blended. Work in dry ingredients, about one-third at a time. Wrap dough and chill at least 2 hours.
- Preheat oven to 375 degrees (F). Grease baking sheets and set aside. Shape dough into 1-inch balls and space 3 inches apart on baking sheets. With a floured fork, flatten cookies criss-cross fashion. Bake 10 to 12 minutes, until soft-firm. Transfer at once to wire racks to cool.
Makes 5 to 6 dozen cookies.
