    Peanut Butter Cookies II

    List of Ingredients


    • 2-1/2 cups sifted all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1/2 cup (1 stick) butter
    • 1/2 cup vegetable shortening
    • 1 cup granulated sugar
    • 1 cup firmly packed light brown sugar
    • 2 eggs
    • 1 cup creamy or crunchy peanut butter


    Instructions


    1. Sift flour with baking powder and salt onto wax paper; set aside.

    2. Cream butter and shortening until light in an electric mixer bowl at moderate speed; add granulated sugar and brown sugar, and cream until fluffy. Beat eggs in one at a time. Add peanut butter and beat at low speed just until blended. Work in dry ingredients, about one-third at a time. Wrap dough and chill at least 2 hours.

    3. Preheat oven to 375 degrees (F). Grease baking sheets and set aside. Shape dough into 1-inch balls and space 3 inches apart on baking sheets. With a floured fork, flatten cookies criss-cross fashion. Bake 10 to 12 minutes, until soft-firm. Transfer at once to wire racks to cool.

      Makes 5 to 6 dozen cookies.
