Stir 'n' Drop Sugar Cookies

- 2 large eggs
- 2/3 cup vegetable oil
- 2 tsp vanilla
- 1 tsp grated lemon peel
- 3/4 cup sugar
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp sugar
- 1/8 tsp nutmeg
Instructions
- Preheat oven to 400º F. Beat the eggs with a whisk. Whisk in the oil, vanilla and lemon peel. Blend in 3/4 cup sugar until the mixture thickens. Combine the flour, baking powder and salt. Blend into the egg mixture.
- Combine 2 tablespoons sugar and the nutmeg; spread on a plate. Drop the dough by teaspoonfuls about 2 inches apart on ungreased baking sheets. Flatten with a greased glass bottom dipped in the sugar-nutmeg mixture.
- Bake in preheated oven 8 to 10 minutes, until a delicate brown. Transfer the cookies to cooling racks immediately.
Makes about 58 cookies.
