    Strawberry Cookies

    • 1/2 cup butter, softened
    • 1/4 cup firmly packed brown sugar
    • 1 large egg, separated
    • 1 tsp vanilla extract
    • 1 cup all-purpose flour
    • 1/4 tsp salt
    • 1 cup finely chopped pecans
    • 1/3 cup strawberry preserves


    Instructions


    1. Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add egg yolk and vanilla, beating until blended. Combine flour and salt; add to butter mixture, beating at low speed until blended. Cover and chill for 30 minutes.

    2. Beat egg white lightly. Roll dough into 1/2-inch balls; dip into egg white and roll in pecans. Place 1 inch apart on an ungreased cookie sheet.

    3. Bake at 375 degrees (F) for 5 minutes. Remove from oven. Make an indentation in the top of each cookie using the handle of a wooden spoon. Bake for an additional 10 minutes. Remove to wire racks to cool. Fill center of each cookie with about 1/2 teaspoon of strawberry preserves.

      Makes 3 dozen cookies.
