Asian BBQ Chicken

List of Ingredients
- 3 pounds boneless chicken thighs
- Salt and pepper to taste
- ¾ cup honey
- â…“ cup ketchup
- ½ cup soy sauce
- 2 teaspoons rice wine vinegar
- 1 tablespoon fresh minced ginger
- 1 teaspoon hot chili garlic sauce
- 1 tablespoon lemon zest
- 2 tablespoons cornstarch
Instructions
- Trim the excess fat from the chicken thighs. Sprinkle the chicken with salt and pepper and place them in a 6-quart slow cooker.
- Mix together the remaining ingredients except the cornstarch. Cook on high for 2 to 3 hours or on low for 4 to 5 hours.
- Remove the chicken and shred it with a fork.
- Add the cornstarch to the remaining liquid in the slow cooker and cook on high for 15 to 30 minutes, or until the sauce thickens.
- Serve over rice, on a sandwich or in a salad.
