Crockpot Black Beans & Rice

List of Ingredients
- 1 lb. bag of dried black beans, rinsed and soaked
- 2 cups chopped ham
- 2 large onions, chopped
- 1 large bell pepper, finely chopped
- 3/4 cup finely chopped celery
- 2 carrots, grated
- 4 large cloves garlic, minced
- 2 tsp basil
- 2 tsp thyme
- 2 Tbsp parsley
- 1 small can tomato paste
- A few dashes (or many) of hot sauce
- Salt and pepper to taste
- 1 cup regular (not instant) rice, uncooked
Instructions
- Throw everything into the crockpot and fill with water to cover. Cover and cook on HIGH for an hour or two.
- Stir, turn heat to LOW, and add more water if needed (water should cover and reach almost to top of crockpot). Replace lid and cook on LOW overnight.
