Red Pepper Chicken

List of Ingredients
- 4 boneless, skinless chicken breast halves
- 1 (15-oz.) can black beans, rinsed and drained
- 1 (15-oz.) jar roasted red peppers, undrained
- 1 (14-1/2-oz.) can Mexican stewed tomatoes, undrained
- 1 large onion, chopped
- 1/2 tsp salt
- Pepper to taste
- Hot cooked rice
Instructions
- Place the chicken in a slow cooker. In a bowl, combine the beans, red peppers, tomatoes, onion, salt and pepper. Pour over the chicken.
- Cover and cook on LOW for 6 hours or until the chicken is no longer pink.
Serve over rice.
Makes 4 servings.
