Split Pea Soup

List of Ingredients
- 1 (16-oz.) pkg. dried green split peas, sorted and rinsed
- 1 ham hock or 1 cup chopped ham
- 2 potatoes, peeled and chopped
- 2 onions, chopped
- 2 carrots, pared and chopped
- 2 ribs celery, plus leaves, chopped
- 1 clove garlic, minced
- 1 bay leaf
- 1/4 cup chopped fresh parsley (or 1 Tbsp dried parsley)
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 1 sprig fresh tarragon, chopped (or 1 tsp dried tarragon)
- 1 Tbsp seasoned salt (or to taste)
- 1/2 tsp freshly ground pepper
Instructions
- Put all ingredients into the crockpot. Add water to within 1 inch from the top; stir. Cook on HIGH for about 8 hours or until peas and other vegetables are soft. Remove the sprigs of thyme and the bay leaf and discard. Remove the ham hock; chop the meat and return to the soup.
Serve with freshly grated Parmesan cheese, chopped fresh parsley and croutons on top.
Final Comments
This is for a 5-quart crockpot; cut down the proportions if you have a smaller crockpot.
