List of Ingredients
- 2 lbs. fresh bing cherries or 3 (17-oz) cans dark, sweet cherries - drained
- 2 cups firmly packed dark brown sugar
- Zest of two oranges
- 5 whole cloves
- 1 star anise (available at specialty food shops)
- 1 cup brandy
- Rounds of puff-pastry and ice cream, as accompaniments
Instructions
- In a saucepan over moderate heat, combine the cherries, sugar, orange zest, cloves, and anise. Bring mixture to a boil, stirring; then simmer, covered, until cherries are soft.
- Add the brandy; bring to a simmer, and flambe.
- Place ice cream in the pastry puffs; spoon cherries over the ice cream.
