Sauce: Butterscotch Sauce

- 1 cup firmly packed light brown sugar
- ½ cup heavy cream
- 4 tablespoons unsalted butter, cut into pieces
- 2 tablespoons dark corn syrup
- 3 tablespoons Scotch whisky or water
- 1 teaspoon pure vanilla extract
Instructions
- In a heavy saucepan over low heat, combine the brown sugar, cream, butter, corn syrup, and whisky and stir with a wooden spoon until the sugar dissolves and the butter melts, about 3 minutes.
- Raise the heat to medium-high and bring to a boil. Continue to boil, without stirring, until the sauce thinly coats the back of the wooden spoon or a candy thermometer registers 224° F, about 4 minutes.
- Remove the sauce from the heat. Stir in the vanilla and let cool slightly before using.
