Sauce: Dark Chocolate Sauce

- 1-1/2 cups heavy cream
- 2/3 cup packed dark brown sugar
- 4 ounces good bittersweet chocolate (not unsweetened), finely chopped
- 3 ounces unsweetened chocolate, finely chopped
- 1/2 stick (4 Tbsp) unsalted butter, softened
- 3 to 4 Tbsp DiSaronno Amaretto or other almond-flavored liqueur (to taste)
Instructions
- Combine cream and sugar in a 2-quart heavy saucepan and bring to a boil over moderately high heat, whisking until sugar is dissolved.
- Remove from heat, add chocolates, and whisk until melted. Add butter and amaretto, and whisk until sauce is smooth. Let cool slightly before serving.
Makes about 3 cups.
Final Comments
The cooled sauce can be refrigerated in an airtight container for up to 1 week. Reheat in a double boiler, stirring occasionally, or in a microwave.
