Southern Sideboard's Rich Bourbon Dessert

List of Ingredients
- 5 dozen individually wrapped Amaretti macaroons
- 1 cup good bourbon
- 2 cups unsalted butter, softened
- 2 cups sugar
- 1 dozen eggs, separated
- 4 (1-ounce) squares unsweetened chocolate, melted
- 1 ½ teaspoons vanilla
- 1 cup chopped pecans
- 2 dozen ladyfingers
- 2 cups whipping cream, whipped
- Confectioners' sugar
Instructions
- Soak the macaroons in the bourbon. Cream the butter and sugar until light. Beat the egg yolks until light, and blend in to the sugar/butter mixture. Fold the chocolate into the mixture. Add the vanilla and pecans, mixing gently. Whip the egg whites until stiff, and fold into the chocolate mixture.
- Line a 10-inch springform pan, bottom and sides, with ladyfingers. Pour a layer of the chocolate mixture into the springform pan, and then add a layer of bourbon-soaked macaroons, alternating layers and ending with the chocolate mixture. Cover the pan and chill overnight.
- When ready to serve, remove the sides of the pan. Nap with whipped cream that has been flavored with confectioners' sugar and a bit of bourbon to taste.
