â—¦ ½ cup sugar
â—¦ 1 6-ounce package lime Jell-O
â—¦ 2 tablespoons fresh lemon juice
â—¦ 1 8-ounce can crushed pineapple with its juice
â—¦ 2 cups heavy cream
Recipe
Put sugar, Jell-O, and 1 cup boiling water into a medium heatproof bowl and stir until Jell-O is dissolved, 2 to 3 minutes. Add lemon juice and pineapple with its juice, and stir well. Refrigerate until the mixture has a syrupy consistency, 45 to 50 minutes.
Whip cream until stiff peaks form, then gently fold cream into Jell-O mixture. Transfer mixture to a 9 by 13-inch pan, smooth the top with a spatula, and refrigerate until firm.
Serve chilled.
