Appetizer: Poor Man's Crab Cakes

"These zucchini cakes from Thelma Mays are so good, you won't even miss the crabmeat. Serve them with a dollop of sour cream on top, and you've got a beautiful — and inexpensive — appetizer."
List of Ingredients
â—¦ ½ cups shredded zucchini, squeezed dry (about one large)
â—¦ 1 cup panko
â—¦ 2 tablespoons grated onion
â—¦ 2 tablespoons all-purpose flour
â—¦ 1 tablespoon mayonnaise
â—¦ 1 teaspoon Old Bay seasoning
â—¦ 2 large eggs, lightly beaten
â—¦ Vegetable oil, for frying
â—¦ Garnish: sour cream, shredded zucchini
Recipe
In a large bowl, combine zucchini, bread crumbs, onion, flour, mayonnaise, and Old Bay. Add eggs, stirring to combine. Shape mixture into ten even patties.
In a large skillet, pour enough oil to make a thin layer in bottom of skillet. Heat over medium-high heat.
Cook patties in hot oil, in batches, if necessary, for 1 to 2 minutes per side, or until lightly browned. Drain on paper towels. Garnish with sour cream and shredded zucchini, if desired. Serve immediately.
