- 16 ounces penne pasta (or similar shape)
- 1 Tbsp vegetable oil
- � cup chopped onion
- 2 cloves garlic, finely minced
- 1 large (28-ounce) can tomatoes, broken up
- 1 tsp dried leaf oregano, crumbled
- Salt and pepper
- 1� to 2 cups shredded mozzarella cheese, divided
Instructions
- Cook penne pasta in boiling salted water as directed on package; drain and set aside.
- Meanwhile, heat vegetable oil in a medium saucepan. Add onion; saut� for about 4 minutes or until tender. Add garlic, tomatoes, and oregano; cook until heated through. Taste and add salt and pepper.
- Combine cooked penne pasta, the tomato mixture, and 1 cup of the shredded cheese; spoon into a lightly buttered casserole. Sprinkle remaining cheese on top. Bake the penne pasta recipe for about 20 minutes at 350� F.
