    Clams: Sands Casino Clams

    • 12 littleneck clams, shucked, on the half shell
    • 1 Tbsp each: finely chopped red, green and yellow sweet bell peppers
    • 1½ strips bacon, fried crisp and chopped fine
    • ½ tsp finely minced garlic
    • ½ tsp finely minced shallots
    • ½ cup fresh English muffin crumbs
    • ½ cup grated Pecorino Romano cheese
    • ½ cup (1 stick) sweet butter, softened
    • 1 tsp fresh thyme leaves
    • Salt and pepper to taste


    Instructions


    1. Heat oven to 400° F.

    2. Combine peppers, bacon, garlic, shallots, crumbs, cheese, butter, thyme, salt and pepper in a bowl, mixing well. Top each clam with about 1½ tablespoons of the mixture.

      Bake until topping is slightly browned, about 6 to 8 minutes.

      Makes 12
