Carrot and Parsnip Fries
Source of Recipe
From "Mad Hungry: Cravings" by Lucinda Quinn
"French fries but healthy! It's all about thin slicing and high heat to get the crispness and enhance the natural sweetness and savoriness of the parsnips and carrots. Parsnip is a highly underused vegetable. Shaped like a carrot, it has a unique earthy, savory-sweet taste."
List of Ingredients
◦ 3 medium carrots, peeled
◦ 3 medium parsnips, peeled
◦ 2 tablespoons extra virgin olive oil
◦ ½ teaspoon coarse salt
◦ ¼ teaspoon red pepper flakes
Preheat the oven to 400° F with a rack in the middle position. Halve the carrots and parsnips crosswise. Slice lengthwise into ¼-inch-thick planks, then slice into ¼-inch-thick fries.
Put the carrots and parsnips on a rimmed baking sheet and toss with the oil, salt, and red pepper flakes.
Spread out into a single layer and roast, turning the veggies once, for about 20 minutes, until crisp and golden brown in places.
