Baked Sliced Apples

List of Ingredients
- 4 large McIntosh apples
- 2 Tbsp fresh lemon juice
- ¼ cup packed light brown sugar
- 3 Tbsp unsalted butter, cut into bits
- 2 Tbsp light rum
- 4 (3-inch) cinnamon sticks
- Organic apple or mint leaves, for garnish (optional)
- Calvados Whipped Cream (recipe follows)
Instructions
- Put a rack in middle of oven and preheat oven to 450° F.
Peel and core apples. Cut each one crosswise into ¼-inch thick slices, keeping slices together, then reassemble slices to form whole apple. Brush with lemon juice. Put apples in a 9-inch glass pie plate and divide 2 tablespoons brown sugar, 2 tablespoons butter, and 1 tablespoon rum evenly among cavities. Sprinkle with remaining 2 tablespoons brown sugar, 1 tablespoon butter, and 1 tablespoon rum.
- Bake apples, basting frequently with pan juices, for 25 minutes. Reduce oven temperature to 350° F, insert cinnamon sticks into cavities, and bake, basting frequently, until apples are tender and well browned and juices are thick and syrupy, about 20 minutes more.
- Arrange apples on plates and spoon syrup over them. Garnish with apple or mint leaves, if desired, and serve with Calvados Whipped Cream.

To make Calvados Whipped Cream:
Beat 1 cup very cold heavy cream with 1 tablespoon confectioners' sugar until cream just holds soft peaks, then beat in 1½ tablespoons Calvados.
