Caramel Clementines

List of Ingredients
- 6 clementines or other tangerine variety
- 1 (14-1/2-oz.) can apricot nectar (1-3/4 cups)
- 1/2 cup sugar
- 2 Tbsp Southern Comfort, orange liqueur, or orange juice
- Pomegranate seeds, optional
Instructions
- Peel clementines and remove any of the fibrous strands of pith on the fruit.
- Place the clementines, apricot nectar and sugar in a medium saucepan. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Using a slotted spoon, remove fruit and place in individual serving bowls. Continue to gently boil apricot nectar mixture about 15 minutes, or until thick and syrupy. Remove from heat.
- Stir Southern Comfort into the syrupy mixture. Spoon over fruit. Sprinkle each serving with pomegranate seeds. Serve warm.
Makes 6 servings.
