Cinnamon Baked Apples with Apple Butter

List of Ingredients
- 4 large Washington apples
- 8 tsp plus 1/3 cup cinnamon sugar
- 1/2 cup apple butter
Instructions
- Preheat oven to 450 degrees (F). Cut a thin slice from top of apples. Core apples, removing any seeds, leaving the flesh an inch thick at the apple's base. Cut a small slice from the bottom of each apple so they don't wobble.
- Sprinkle inside each apple with 1 teaspoon cinnamon-sugar. Fill each hole with about 2 tablespoons apple butter. Dust top of each evenly with 1 teaspoon cinnamon sugar. Place filled apples in a shallow baking dish or pie pan. Add 1 inch of water. Bake 45 to 50 minutes until tender. Let cool to room temperature.
- Put remaining 1/3 cup cinnamon-sugar and 1 cup of water in a small saucepan. Bring to a boil and boil for 1 minute. Lower heat to a simmer and cook, stirring constantly, until it is the consistency of thick honey. Whisk in 3 tablespoons of water and stir until smooth. Remove from heat.
Drizzle baked apples with warm (or room temperature) sauce.
