    Kiwifruit and Cream

    List of Ingredients


    • 1 10-oz. pkg. frozen raspberries or strawberries
    • 1 Tbsp sweet wine, rum, or orange liqueur
    • 3/4 cup confectioner's sugar
    • 2 cups part-skim ricotta cheese
    • 6 kiwifruit, peeled and sliced crosswise, then sliced in half


    Instructions


    1. Place frozen berries in bowl. Defrost on HIGH in the microwave for 2 minutes. Puree berries in a blender. Pour berries through a sieve, discarding seeds.

    2. Add liquor and 1/4 cup of the sugar to the berries. Gently whip the ricotta with the remaining sugar.

    3. Place some kiwifruit slices in 4 parfait glasses or dessert bowls. Add cheese, then berry sauce. Repeat, ending with kiwifruit layer. Chill.

      Serve with remaining sauce.

      Serves 4
