Kiwifruit and Cream

List of Ingredients
- 1 10-oz. pkg. frozen raspberries or strawberries
- 1 Tbsp sweet wine, rum, or orange liqueur
- 3/4 cup confectioner's sugar
- 2 cups part-skim ricotta cheese
- 6 kiwifruit, peeled and sliced crosswise, then sliced in half
Instructions
- Place frozen berries in bowl. Defrost on HIGH in the microwave for 2 minutes. Puree berries in a blender. Pour berries through a sieve, discarding seeds.
- Add liquor and 1/4 cup of the sugar to the berries. Gently whip the ricotta with the remaining sugar.
- Place some kiwifruit slices in 4 parfait glasses or dessert bowls. Add cheese, then berry sauce. Repeat, ending with kiwifruit layer. Chill.
Serve with remaining sauce.
