    Plums with Vanilla

    List of Ingredients


    • 2 lbs. small, oval purple plums, pitted and thinly sliced
    • 2 Tbsp sugar
    • Grated zest of 1 lemon
    • 1/2 vanilla bean, seeds scraped
    • 2 Tbsp water
    • *
    • Vanilla ice cream, creme fraiche, or yogurt sorbet, for serving


    Instructions


    1. In a medium saucepan, combine plums, sugar, lemon zest, vanilla seeds and the 2 tablespoons water. Place over medium heat, stirring occasionally, until plums give up their juice and soften, 5 to 10 minutes.

    2. Taste and adjust seasoning, adding more sugar, lemon zest or vanilla, if desired.

    3. Let cool 20 minutes. Serve with ice cream, creme fraiche, or yogurt sorbet.
