Plums with Vanilla

List of Ingredients
- 2 lbs. small, oval purple plums, pitted and thinly sliced
- 2 Tbsp sugar
- Grated zest of 1 lemon
- 1/2 vanilla bean, seeds scraped
- 2 Tbsp water

- Vanilla ice cream, creme fraiche, or yogurt sorbet, for serving
Instructions
- In a medium saucepan, combine plums, sugar, lemon zest, vanilla seeds and the 2 tablespoons water. Place over medium heat, stirring occasionally, until plums give up their juice and soften, 5 to 10 minutes.
- Taste and adjust seasoning, adding more sugar, lemon zest or vanilla, if desired.
- Let cool 20 minutes. Serve with ice cream, creme fraiche, or yogurt sorbet.
