    Winter Fruit in Vanilla Syrup

    List of Ingredients


    • 1-1/2 cups water
    • 1-1/2 cups granulated sugar
    • 1/8 tsp salt
    • 2 Tbsp vanilla extract
    • 1 tsp fresh lemon juice
    • 1/2 tsp ground cinnamon
    • 1/2 cup dried apricots
    • 1/2 cup dried cranberries
    • 1/2 cup dried plums
    • 1/2 cup dried figs
    • 3 pears, peeled, cored and sliced
    • 3 Tbsp unsalted butter


    Instructions


    1. In a medium saucepan over medium-high heat, heat the water, sugar and salt until sugar dissolves, stirring occasionally. Bring to a boil, reduce heat to medium and simmer about 10 minutes, until mixture is thick and syrupy.

    2. Stir in the vanilla, lemon juice and cinnamon. Add apricots, cranberries, dried plums, figs and pears; simmer 20 to 30 minutes, until dried fruit becomes plump and pear slices are tender. Bring to room temperature; tightly cover and refrigerate overnight.

    3. Before serving, bring fruits to a simmer. Stir in butter until melted. Cool slightly, and serve.

      Serves 4 to 6
