Winter Fruit in Vanilla Syrup

List of Ingredients
- 1-1/2 cups water
- 1-1/2 cups granulated sugar
- 1/8 tsp salt
- 2 Tbsp vanilla extract
- 1 tsp fresh lemon juice
- 1/2 tsp ground cinnamon
- 1/2 cup dried apricots
- 1/2 cup dried cranberries
- 1/2 cup dried plums
- 1/2 cup dried figs
- 3 pears, peeled, cored and sliced
- 3 Tbsp unsalted butter
Instructions
- In a medium saucepan over medium-high heat, heat the water, sugar and salt until sugar dissolves, stirring occasionally. Bring to a boil, reduce heat to medium and simmer about 10 minutes, until mixture is thick and syrupy.
- Stir in the vanilla, lemon juice and cinnamon. Add apricots, cranberries, dried plums, figs and pears; simmer 20 to 30 minutes, until dried fruit becomes plump and pear slices are tender. Bring to room temperature; tightly cover and refrigerate overnight.
- Before serving, bring fruits to a simmer. Stir in butter until melted. Cool slightly, and serve.
