Thanksgiving: Baked Ham with Honey-Port Glaze

â—¦ 1 fully cooked bone-in ham, about 8 pounds
â—¦ ½ cup firmly packed golden brown sugar
â—¦ ¼ cup honey
â—¦ 2 teaspoons dry mustard
â—¦ ¾ cup port
Recipe
Position a rack in the lower third of the oven and preheat to 325° F.
Using a sharp knife, score the fat on the upper half of the ham in a diamond pattern, cutting about ¼ inch deep. Place the ham, fat side up, on a rack in a roasting pan. Roast for 1 ¼ hours.
In a small bowl, mix together the brown sugar, honey, and mustard. Carefully spread half of the sugar-honey mixture over the scored surface of the ham. Stir the port into the remaining sugar-honey mixture. Continue to roast the ham, basting several times with the port mixture, until the ham is well glazed and shiny, about 1 hour longer.
Transfer the ham to a carving board and let rest for 15 minutes before carving.
