List of Ingredients
• 2 cups cream, divided
• 2 cups sugar
• 1â…“ cups light corn syrup
• 1 tsp pure vanilla extract
• 12 Tbsp unsalted butter, cubed
Recipe
Lightly grease a 9-inch square pan and set aside.
In a heavy saucepan over low heat, combine 1 cup of the cream with the sugar and syrup. Stir constantly until the mixture boils. Slowly add the remaining cup of cream, vanilla, and the butter, one piece at a time.
Continue cooking and stirring until it reaches the firm ball stage, 260°F on a candy thermometer. Pour into the prepared pan. Cool 6 hours on a wire rack before cutting into squares.
Makes 2 pounds.
