Christmas: Kentucky Bourbon Balls

Recipe Introduction
"This yummy chocolate confection, half cake, half candy, is believed to have been created in Kentucky by a German immigrant. It is impossible to unravel these culinary mysteries, but this I know: the recipe traveled fast because it is both delightful and easy to make. It's best when made with leftover homemade cake, but vanilla wafers work fine, too."
List of Ingredients
◦  1 cup leftover white cake or vanilla wafer crumbs
◦  1 cup sifted confectioners' sugar
◦  ¼ cup unsweetened cocoa powder, or to taste
◦  3 Tbsp light corn syrup
◦  ¼ cup bourbon
◦  1 cup chopped pecans
◦  Unsweetened cocoa powder, for coating
Recipe
Combine the crumbs, confectioners' sugar, ¼ cup cocoa powder, corn syrup, and bourbon in a food processor or with an electric mixer. Blend until thoroughly mixed. Using a spoon, stir in the pecans.
Roll tablespoonfuls of the mixture to form small truffle-size balls. (The mixture should be soft. If it is too dry to roll easily, add a little more corn syrup.)
Spread cocoa powder on a plate and roll the balls in it to coat them. Store the bourbon balls in an airtight tin and refrigerate them (or you can freeze them).
Makes 30 to 36 balls
