    Christmas: Mint Chocolate Mousse

    From "Southern Living Christmas Cookbook"

    List of Ingredients


    • 1½ cups miniature marshmallows *
    • 1/3 cup milk
    • 2 (5.32-ounce) packages mint-filled chocolate squares, unwrapped
    • 2½ cups whipping cream, divided
    • 2 Tbsp powdered sugar
    • Garnish: chocolate shavings


    Instructions


    1. Microwave marshmallows, milk and chocolate squares in a 4-quart microwave-safe bowl at High 2 minutes, stirring every 30 seconds or until melted. Let stand 30 minutes, or until mixture is cool and begins to thicken.

    2. Beat 2 cups whipping cream at medium speed with an electric mixer until stiff peaks form. Fold whipped cream into chocolate mixture; spoon into shot glasses or 1½-quart serving bowl. Cover and chill 4 hours.

    3. Beat remaining ½-cup whipping cream with powdered sugar. Spoon on top of mousse and garnish, if desired.

      Makes 8 servings.



    Final Comments


    * 15 large marshmallows may be subsituted.

    * For testing purposes only, we used Ghirardelli Dark Chocolate with White Mint Filling.
