    Christmas: Pecan Butter Cookies

    List of Ingredients


    • 1 cup unsalted butter, softened
    • 1/3 cup honey
    • 2½ cups all-purpose flour
    • 1½ cups finely chopped pecans
    • ½ tsp salt
    • Confectioners' sugar for rolling


    Instructions


    1. In a large bowl, beat butter and honey at medium speed with an electric mixer until creamy. In a medium bowl, combine flour, pecans, and salt. Gradually add flour mixture to butter mixture. Cover and refrigerate for 30 minutes.

    2. Preheat oven to 300° F. Line baking sheets with parchment paper.
      Roll dough into 1-inch balls. Place 1 inch apart on prepared baking sheets. Bake for 30 minutes, or until set but not browned. Let cool for 5 minutes.

    3. Roll cookies in confectioners' sugar. Let cool completely. Roll in confectioners' sugar a second time.

      Makes about 4 dozen.
