Cinco de Mayo: Mango Pico de Gallo

List of Ingredients
- 8 ripe mangoes
- 1/2 bunch cilantro, roughly chopped
- Juice of 1 lime
- 1 red onion, finely diced
- 2 jalapeños, seeded and diced
- Dash of salt
Instructions
- Make sure your mangoes are nice and ripe, then cut off two thick slices on either side of the pit.
- In each section of mango, use a small knife to cut a diamond pattern all the way to the inside of the skin. Use a spoon to scoop around the inside of the skin, allowing the chunks of mango to fall out.
- Pile the mango chunks in a bowl. Add the cilantro and lime juice, the red onion, the jalapeños, and salt. Stir it all around and give it a taste, adding a little more salt if needed. Serve it with blue corn or regular tortilla chips.
Makes 8 to 12 servings.
