Cinco de Mayo: Watermelon Agua Fresca

List of Ingredients
- 1 cup finely chopped seedless watermelon
- 7 cups coarsely chopped seedless watermelon
- 2 cups or more water
- ½ cup sugar
- 1 large lime, juiced
- 8 to 12 ice cubes
Instructions
- Set finely chopped watermelon aside. Place coarsely chopped watermelon in the container of a blender, and process until smooth.
- Pour puréed watermelon into a large glass pitcher. Add 2 cups water and sugar, stirring until sugar is dissolved. Add lime juice and reserved watermelon.
- Just before serving, add 8 to 12 ice cubes. Stir well.
Makes approximately 2½ quarts.
