    Easter: Best Ever Ham

    List of Ingredients


    • 1 (5- to 7-pound) rump smoked ham
    • 1 (8-ounce) can peeled apricots (reserve juice)
    • 1 cup packed brown sugar
    • 1 cup plus 2 Tbsp amaretto
    • 2 Tbsp fresh lemon juice
    • 1 Tbsp dry mustard


    Instructions


    1. Preheat oven to 325° F.
      Place ham on a rack in a roasting pan, fat side up. Drain the apricots, reserving 1/3 cup of the juice. In a medium saucepan, combine reserved apricot juice, brown sugar, the 1 cup of amaretto, lemon juice and mustard. Bring to a boil.

    2. Let the sauce cool slightly and spoon evenly over the ham. Bake ham for 1 hour, basting every 20 minutes with sauce from pan. After an hour, top the ham with the apricots, using toothpicks to hold them in place, and splash the ham with the remaining 2 tablespoons amaretto.

    3. Bake about 30 minutes longer, or until the ham and apricots are browned; a meat thermometer should read 140°. Let rest for 5 minutes before slicing and serving.
