Easter: Day-After Easter Egg Salad

- 1/4 cup light mayonnaise
- 1 Tbsp chopped fresh dill
- 1 Tbsp grated onion
- 1 Tbsp dill pickle relish
- 1 Tbsp prepared yellow mustard
- 1/4 tsp pepper
- 1/8 tsp salt
- 8 hard-boiled eggs, peeled and coarsely chopped
Instructions
- Stir together first 7 ingredients in a large bowl; gently stir in eggs. Cover and chill at least 2 hours or up to 2 days. Serve on lettuce bed or toasted sandwich bread.
Makes 5 servings.
