Father's Day: Father's Day Lamb Chops

- 8 loin lamb chops, about 1 inch thick
- 2 Tbsp extra-virgin olive oil
- ¼ cup chopped garlic
- 1 Tbsp chopped fresh rosemary
- 2 tsp chopped fresh thyme
- Salt and freshly ground black pepper
Instructions
- Arrange the lamb chops on a platter and brush both sides with olive oil.
- Mix together the garlic, rosemary, thyme, and salt and pepper to taste; spread the mixture evenly over both sides of each of the chops. The chops can sit at room temperature while the coals are getting hot.
- Prepare enough coals for a hot charcoal fire, or preheat your gas grill on high for 10 minutes with the lid closed. When the coals are ready or the gas grill is hot, grill the lamb chops for 9 to 11 minutes, turning once, until they are medium-rare. Transfer to a platter and let them rest for 5 minutes before serving.
