Halloween: Halloween Candy-Apple Cake

- 2 cups flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/8 tsp salt
- 1 tsp cinnamon
- 1/2 tsp freshly grated nutmeg
- 1 tsp vanilla
- 1 (21-ounce) can apple pie filling
- 1/2 cup vegetable oil
- 2 eggs, lightly beaten
- 2/3 cup chopped walnuts
- 1/2 cup golden raisins
- 12 ounces top-quality caramel sauce
Instructions
- Coat a 10-inch tube or bundt pan with cooking spray. In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, vanilla, apple pie filling, oil and eggs. Mix well with a wooden spoon. Fold in the walnuts and raisins.
- Spoon the mixture into the prepared pan. Bake on the middle rack of a preheated 325º F oven for 70 minutes, or until a tester inserted in the center comes out clean. Cool to room temperature in the pan on a rack, then cover and store at room temperature for 24 hours to allow the flavors to blend.
- To serve: Remove the cake from the pan and place on a serving plate. Spoon the caramel sauce into a 4-cup glass measure and microwave on 100% power until hot, but not boiling, about 1 minute. Pour the sauce over the cake or over individual slices.
Makes 12 servings.
