Halloween: Roasted Pumpkin Seeds

- 2 cups pumpkin seeds
- 2 Tbsp vegetable oil
- 1 tsp salt
Instructions
- Preheat oven to 350º F.
- Rinse seeds well in cold water to remove any pumpkin fiber; pat dry. In a large bowl, toss the seeds with the oil and salt.
- Spread seeds in a single layer on a baking sheet. Bake for 12 to 15 minutes, until crisp and golden. Shake pan occasionally.
Makes 2 cups.
