Thanksgiving: Maple Sweet Potatoes

- 2 medium sweet potatoes, peeled and diced
- 1 Tbsp butter
- 3 thin slices ginger, minced fine
- 2 Tbsp cream
- 1/4 cup maple syrup
- 1 Tbsp brown sugar
- Salt and pepper to taste
Instructions
- Boil the peeled and diced sweet potatoes until they are tender, 20 to 25 minutes. Drain and set aside.
- Heat a saucepan over medium heat. Add the butter and ginger; saute slowly for one minute.
- Add the syrup, brown sugar, and cream; cook slowly for 2 minutes, stirring. This mixture should caramelize and thicken a bit.
- Add the sweet potatoes and mix; mash with a fork, leaving a few small lumps for texture.
- If the mixture is too thick, a little milk or cream may be added. Add salt and pepper to taste; garnish with a generous drizzle of maple syrup.
