Mother's Day: Raspberry Cream Muffins

- 1 cup raspberries
- ¾ cup plus 2 Tbsp sugar, divided
- ¼ cup butter, softened
- 1 egg, beaten
- 1 tsp almond extract
- 2¼ cups all-purpose flour
- 1 Tbsp baking powder
- ½ tsp salt
- 1 cup half-and-half
- 1 cup white chocolate chips, finely chopped
- 2 Tbsp brown sugar, packed
Instructions
- In a small bowl, toss raspberries with ¼ cup sugar; set aside. In a large bowl, blend butter and ½ cup sugar. Beat in egg and extract.
- Combine flour, baking powder, and salt; add to butter mixture alternately with half-and-half. Stir in raspberries and chocolate chips. Fill paper-lined muffin cups two-thirds full. Combine brown sugar and remaining sugar; sprinkle over batter.
- Bake at 350° for 25 to 30 minutes. Cool for 5 minutes before removing muffins to wire rack. Serve warm.
Makes one dozen.
