    Mother's Day: Raspberry Cream Muffins

    List of Ingredients


    • 1 cup raspberries
    • ¾ cup plus 2 Tbsp sugar, divided
    • ¼ cup butter, softened
    • 1 egg, beaten
    • 1 tsp almond extract
    • 2¼ cups all-purpose flour
    • 1 Tbsp baking powder
    • ½ tsp salt
    • 1 cup half-and-half
    • 1 cup white chocolate chips, finely chopped
    • 2 Tbsp brown sugar, packed


    Instructions


    1. In a small bowl, toss raspberries with ¼ cup sugar; set aside. In a large bowl, blend butter and ½ cup sugar. Beat in egg and extract.

    2. Combine flour, baking powder, and salt; add to butter mixture alternately with half-and-half. Stir in raspberries and chocolate chips. Fill paper-lined muffin cups two-thirds full. Combine brown sugar and remaining sugar; sprinkle over batter.

    3. Bake at 350° for 25 to 30 minutes. Cool for 5 minutes before removing muffins to wire rack. Serve warm.

      Makes one dozen.
