    New Year's: Chilled Asparagus with Caviar Mayonnaise

    List of Ingredients


    • 2 pounds asparagus
    • 1 cup mayonnaise
    • 1 (8-ounce) container sour cream
    • 1 Tbsp fresh lemon juice
    • 2 tsp prepared mustard
    • 1 (2-ounce) jar salmon caviar, drained
    • 1 (2-ounce) jar lumpfish caviar, drained
    • Garnish: chopped fresh parsley


    Instructions


    1. Snap off tough ends of asparagus. Cook asparagus in boiling salted water to cover in a large saucepan 2 to 3 minutes, or until crisp-tender; drain and plunge into ice water to stop the cooking process. Drain.

    2. Combine mayonnaise and next 3 ingredients; spoon over asparagus. Sprinkle with caviars. Garnish, if desired.

      Makes 10 servings.
