Christmas: Soft Ginger Bar Cookies

- 1-1/4 cups sugar
- 1 cup butter, softened
- 1 egg
- 3 Tbsp molasses
- 1 tsp vanilla
- 3 cups flour
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1-1/2 tsp ground ginger
- 1/4 tsp salt
- 1/4 tsp ground cloves
- 3 Tbsp coarse decorator sugar or regular sugar
Instructions
- Combine 1-1/4 cups sugar with the butter in a large mixer bowl. Beat at medium speed, scraping bowl often until well mixed (1 to 2 minutes).
- Add egg, molasses, and vanilla, beating again for about 1 to 2 minutes. Reduce speed to low. Add flour, baking soda, cinnamon, ginger, salt and cloves. Continue beating, scraping bowl often, until well mixed (1 to 2 minutes).
- Press mixture into a greased 15x10x1-inch jelly roll pan. Sprinkle with decorator sugar. Bake 16 to 20 minutes in a 350-degree oven until golden brown. Cool. Cut as desired.
Makes about 4 dozen bars.
