Halloween: Taffy Apple Snack Cake

- 1 package (about 18 ounces) yellow cake mix with pudding in the mix, divided
- 2 eggs
- ¼ cup vegetable oil
- ¼ cup water
- ¼ cup packed brown sugar, divided
- 2 medium apples, peeled and diced
- 1 cup chopped nuts
- 2 Tbsp butter, melted
- ¼ tsp ground cinnamon

- ½ cup caramel topping
Instructions
- Preheat oven to 350° F. Spray 8-inch square baking pan with nonstick cooking spray. Reserve ¾ cup cake mix.
- Beat remaining cake mix, eggs, oil, water, and 2 tablespoons brown sugar in large bowl with electric mixer at medium speed 2 minutes. Stir in apples. Spread batter in prepared pan.
- Combine reserved cake mix, remaining 2 tablespoons brown sugar, nuts, butter, and cinnamon in medium bowl until well blended. Sprinkle over batter. Bake 40 to 45 minutes, or until toothpick inserted into center comes out clean.
Drizzle with caramel topping.
Makes 8 servings.
