    Thanksgiving: Cheesecake Pecan Pie

    • 1 (9-inch) unbaked pie shell
    • .
    • -- First Layer --
    • 8 ounces cream cheese, at room temperature
    • 1 egg, lightly beaten
    • 1/3 cup sugar
    • 1 tsp vanilla extract
    • 1-1/2 cups pecan halves
    • .
    • -- Second Layer --
    • 2 Tbsp butter
    • 2 eggs, lightly beaten
    • 1/4 cup light brown sugar
    • 2/3 cup light corn syrup
    • 1/2 tsp vanilla extract


    Instructions


    1. Preheat the oven to 375° F.

    2. For the first layer:
      Combine the cream cheese, egg, sugar and vanilla. Beat until light and creamy, about 2 minutes. Pour the mixture into the pie crust. Arrange the pecan halves over the cream cheese mixture.

    3. For the second layer:
      Melt the butter in a saucepan over low heat. Continue to cook until it turns light brown and has a nutty aroma. Do not let it burn. Combine the browned butter with the eggs, brown sugar, corn syrup and vanilla. Carefully pour it over the pecans. Bake the pie for 40 to 45 minutes or until set.

      Makes 8 servings.
