Thanksgiving: Cranberry Brie Appetizer Bites

- 24 won ton wrappers (3¼ inches square)
- ¾ cup whole berry cranberry sauce
- 1 tsp lemon juice
- ½ tsp finely shredded lemon peel
- 1 round of brie (8 ounces), cut into 24 cubes (about ¾-inch)
Instructions
- Preheat oven to 350° F. Coat 24 miniature muffin cups with vegetable oil spray.
Press one won ton wrapper gently into each cup, allowing ends to extend above cups. Coat edges of won ton wrappers with vegetable oil spray. Bake in preheated oven 12 to 14 minutes, or until bottoms of cups are beginning to brown, and then remove from oven.
- In medium saucepan over medium heat, cook cranberry sauce 4 to 5 minutes, stirring occasionally, until hot. Remove from heat, and stir in lemon juice and peel.
- Place one cube brie in each cup and cover pan with a sheet of aluminum foil. Return to oven. Bake 3 to 5 minutes longer, or until cheese is soft. Remove from oven and top each with about 1 teaspoon of the cranberry mixture.
Makes 24 appetizers.
