Thanksgiving: Creamed Corn

- 1 Tbsp unsalted butter
- 2 cups sliced leeks
- 10 cups frozen corn kernels
- 3 cups shredded Cheddar cheese (divided)
- 1½ cups heavy cream
- 2 Tbsp sugar
- 2 tsp fresh lemon juice
- Salt and cayenne pepper to taste
- Minced fresh chives
Instructions
- Preheat oven to 350° F; coat an 8-inch baking dish with nonstick spray. Sauté leeks in butter in a large sauté pan over medium-high heat until soft, about 2 minutes. Add corn and sauté just until kernels thaw, about 5 minutes. Pulse 4 cups corn mixture in a food processor until coarsely chopped, then return it to the pan.
- Stir in 2 cups Cheddar, cream, sugar, lemon juice, salt and cayenne to taste.
- Transfer corn mixture to the prepared baking dish, toss with remaining cheese, and bake until cheese is golden, about 30 minutes. Before serving, garnish with chives.
Makes 8½ cups.
