    Thanksgiving: Creamed Corn

    List of Ingredients


    • 1 Tbsp unsalted butter
    • 2 cups sliced leeks
    • 10 cups frozen corn kernels
    • 3 cups shredded Cheddar cheese (divided)
    • 1½ cups heavy cream
    • 2 Tbsp sugar
    • 2 tsp fresh lemon juice
    • Salt and cayenne pepper to taste
    • Minced fresh chives


    Instructions


    1. Preheat oven to 350° F; coat an 8-inch baking dish with nonstick spray. Sauté leeks in butter in a large sauté pan over medium-high heat until soft, about 2 minutes. Add corn and sauté just until kernels thaw, about 5 minutes. Pulse 4 cups corn mixture in a food processor until coarsely chopped, then return it to the pan.

    2. Stir in 2 cups Cheddar, cream, sugar, lemon juice, salt and cayenne to taste.

    3. Transfer corn mixture to the prepared baking dish, toss with remaining cheese, and bake until cheese is golden, about 30 minutes. Before serving, garnish with chives.

      Makes 8½ cups.
